The same page describes scratch-made vegan comfort food with Mexican and American cooking, counter service, and indoor and outdoor seating.
VegNews, in a story dated Oct 19, 2026, said the Colfax location opens Oct 17 and listed hours of 9 a.m. to 8 p.m., seven days a week. Westword's Oct 17 roundup said the opening was at 1490 Eudora St. and that the Park Hill kitchen closed Oct 11. A contact block on veganvan.com still prints 5155 E 39th Ave. That is not the address used for the Colfax restaurant on the same site.
