Westword's May 1, 2026 story said chef Theo Adley opened reservations to the public starting Wednesday, May 6, and described the cooking as Spanish and French. It tied a 2024 James Beard nomination for Best Chef in the Mountain Region to his Lyons restaurant, Marigold, not to this room. Chili Chili's Oct 3 story says the restaurant opened on a Friday at 1441 26th St. It does not print October 2. Because that line conflicts with the May Westword report, this page does not use October 2 as the opening date.
